  • 500g Radiatori spelt pasta
  • 1 jar basil pesto
  • 4 slices Icelandic smoked salmon
  • 100g cherry tomatoes
  • 80g Parmesan cheese (one piece)
  • A few baby basil leaves
  • Pepper


Cut the cherry tomatoes into halves or quarters, depending on size; use a mandolin to cut the Parmesan into shavings; cook the pasta for 3 to 5 minutes. In salted water; drain and place in a hot pan with the basil pesto.

Mix and arrange in soup plates; arrange the tomatoes on top; cut the slices of smoked salmon into large chunks and place on top of the pasta.

Sprinkle with Parmesan shavings and basil, then season with pepper.
