ABC of Caviar

Mer Caspienne (Caspian Sea)

The Caspian Sea covers an area of 360,000 square kilometers. It’s the world’s largest inland salt sea. The countries sharing its waters are Russia, Iran, Azerbaijan, Kazakhstan and Turkmenistan.

The Caspian is divided into three basins: The shallow northern basin, 175 meters deep; the central basin, with an average depth of 325 meters; and the southern basin, with a depth of up to 1,000 meters (Iran). 90% of quality wild caviar comes from the Caspian Sea, particularly on the Iranian side, renowned for the temperature of its waters, its salinity and also its food – the best!

The salinity of the Caspian Sea is 13/14g per liter, while that of a “normal” sea or ocean is 33/40g per liter.

This explains why farmed sturgeon, already accustomed to low-salt water, acclimatize perfectly to freshwater.

For Jacques Nebot, the Caspian Sea is “quite a magical place, with very special landscapes”.

You have to do the coast by boat to get to know it. It’s a kind of bean, long and not very wide in places, divided into various zones: plains, mountains, swamps, arid zones… Is it a sea or a lake? The question is not yet settled and continues to fuel discussions!
