N stands for:

Raphaël Bouchez, Chairman of Kaviari and Jacques Nebot

In the 70s, Jacques Nebot ran a large company dedicated to caviar. His position placed him in constant contact with an elitist clientele, the great influencers of fine dining, but also, upstream, with the Iranian players in the sturgeon fishing and caviar markets.

With a unique experience acquired during five years, its privileged links woven in the world of caviar and an in-depth knowledge of the product and its universe, Jacques Nebot wished to go further and take his independence.

In 1981, he founded Astara “le caviar des caviars”, a company importing, preparing and distributing caviars from the Caspian region and fine seafood products. Four years later, he launched his own restaurant, Le Coin du Caviar, near the Bastille.

In 1988, Astara was sold to the Suez group. The organizational skills of this courteous and distinguished man leave no one indifferent. Most notably, Monegasque businessman Michel Pastor, who offered him the presidency of Hédiard when he bought the prestigious brand on Place de la Madeleine in Paris.

In 1995, Jacques Nebot set to work to restore the world-famous name to its former glory. A winning bet. At the same time, in 1997 he bought Astara from Européenne de Gastronomie, the Suez subsidiary that had acquired it nine years earlier. The Hédiard adventure came to an end when it was sold to a Russian businessman in 2007.

But since 2001, another challenge has already been met. The Kaviari company was born, under the management of Raphaël Bouchez. He and Jacques Nebot have known each other since 1995, when the former hired the latter as sales manager at Hédiard.

Once again, Jacques Nebot’s experience, know-how and advice are supporting the development of this fledgling company. Today, like a “guardian of the temple”, Jacques Nebot continues to watch over Kaviari’s destiny, contributing his invaluable insight and infectious passion.
