Caviar is first and foremost an egg, so it’s naturally rich in protein. Beyond its extraordinary flavors, caviar harbors exceptional nutritional qualities. It is rich in minerals and vitamins (A, E, C, B6), as well as unsaturated fatty acids (omega-3), trace elements and antioxidants. Its choline content also gives it an “anti-hangover” effect (hence its perfect match with vodka).

Caviar is rich in omega-3 fatty acids, well-known for their role in preventing certain cardiovascular diseases (heart attacks and strokes) and aging. They lower bad cholesterol levels and raise good cholesterol levels. Consumption of omega-3s could also have a preventive effect on dementia and Alzheimer’s disease in particular.

Caviar is also very good for the skin, and many cosmetics brands use caviar oil in their creams (La Prairie’s famous caviar cream) to improve skin texture and elasticity.

Caviar has also long been used as a tonic in Russia. Oil can be extracted from it and prescribed to patients. For the record, the son of Czar Nicholas II had to eat caviar for breakfast given his frail health, but he hated it. The butler prepared caviar sandwiches with crushed banana…
