Caviar has always been served in the dining cars of the Orient-Express and Trans-Siberian trains to satisfy the elite clientele. On the Orient-Express, they served Iranian caviar, while on the Trans-Siberian, which runs from Moscow to Vladivostok via Siberia, they obviously served Russian caviar.
During the summer of 2016, an ephemeral “Orient Express Table”, set up in a 1920s dining car, made stops in Cannes, Paris and Bordeaux. This traveling restaurant was orchestrated by Michelin-starred chef Yannick Alléno and pastry chef Yann Couvreur, who brought back to life the fine dining served on board trains. On the menu for this memorable journey, an appetizer of “Sweet iodized celery with caviar grains”.
