Beef Tartar with Caviar
The beef tartar with caviar is exceptional and quite daring.
The caviar adds a touch of saltiness to the beef, while the egg yolk adds texture. Well blended, it binds beautifully and melts in the mouth.
Chop the meat finely with a knife.
Chop the shallots and parsley.
In a bowl, mix the meat, shallots, parsley and Worcestershire sauce. Add salt and pepper.
Serve the tartar on a plate using a circle: Place the tartar inside, press down a little to hold it in place, then remove the circle.
Serve each portion with a raw egg yolk and a dollop of caviar.
