Caviar Pizzettes

These little Caviar Pizzettes are inspired by traditional caviar blinis, one of the house’s signature recipes.

Regardless of the caviar, the combination of textures and flavors is magical.

Their neutral taste makes them ideal for pairing with your favorite caviar.




Pour the flour, salt, baking powder and olive oil into the bowl of a food processor fitted with the dough hook.

Knead gently, then drizzle in the warm water.

Knead for 10 minutes, then pour the dough into an oiled bowl.

Cover and leave to stand at room temperature for 1 hour.

Preheat the oven at 200 °C.

Place the dough on a floured work surface.

Knead quickly by hand, then roll out the dough to a thickness of 4 to 5mm.

Using a cookie cutter, cut out discs of dough about 6cm in diameter and place on a baking sheet lined with parchment paper.

Prick the dough and place the pizza bases in the oven for 10 to 12 minutes, until golden brown.

Leave to cool for 5 minutes, then garnish with crème fraîche and caviar.

Sprinkle with dill sprigs and serve.
