Potatoes with Caviar

Potatoes with caviar are a classic.

Like blinis, potatoes have a fairly neutral taste, which means they can be paired with any caviar.

Potatoes have the soft, melt-in-the-mouth texture of caviar. A real delight with small potatoes from Noirmoutier.




Wash the potatoes and plunge them with their skins into a pan of boiling salted water.

Once cooked, remove from the water and leave to cool.

Cut the potatoes in half and arrange on plates.

Garnish with thick crème fraîche and caviar.

Sprinkle with chopped chives and serve.
