Red Onion and Caviar Tatin

The combination of red onion and caviar is quite astonishing.

The sweetness of onion tatin pairs well with a caviar with final notes of honey and flowers, such as Kristal® caviar.


Recipe

Preheat the oven at 200 °C.

Peel and slice the onions into rings.

Place a knob of butter and a drizzle of vinegar in small tart tins.

Sprinkle with brown sugar and fresh thyme, and place a slice of onion in each tin base.

Bake for 15 minutes, then place a disk of puff pastry slightly larger in diameter than the molds on top.

Turn the edges inwards and prick the top with a fork.

Bake for another 15 minutes.

Add a dollop of caviar and serve.
