Cream of Cauliflower and Caviar

It’s a delicious recipe and a combination long used by many chefs, such as Jérôme Schilling.

This wintry recipe combines the creamy, buttery texture of cauliflower with the acidity of caviar, which brings the cauliflower to life.

Kristal® caviar, very mild, honeyed and floral, goes very well with cauliflower and root vegetables.




Wash the cauliflower, remove the leaves and cut off the florets.

Place the cauliflower florets in a pot of boiling water and cook for 10 minutes.

Pour the florets into the bowl of a blender and blend, gradually adding the cream.

Season and blend again.

Serve with fresh herbs and caviar.
